Bacon Waffles Among Offerings at Andersonville's Replay Outpost

ANDERSONVILLE — The former chef de cuisine at NoMI Kitchen will take the helm of the kitchens at both Replay and Elixir Lounge, two bars that are slated to open in Andersonville in August. 

LKH Management, the management team behind the bars, named Paul Dobroski the executive chef at Replay, 5368 N. Clark St., and Elixir Lounge, 1507 W. Balmoral Ave., according to a news release.

Dobroski got his start at Everest Restaurant, 440 S. LaSalle St., before rising the ranks at NoMI Kitchen at Park Hyatt Chicago, 800 N. Michigan Ave., according to the release.

He will be joined by sous chef Bernardo Ibarra, who worked as a sous chef at the much-lauded West Loop restaurant Girl & the Goat, 809 W. Randolph St., for four years.

Andersonville's Replay outpost will serve contemporary American cuisine with a modern twist at all hours of the day, with breakfast and brunch, lunch, dinner and late-night menus.

Expect signature dishes including, but not limited to, bacon waffles with black pepper butter, sea salt and black cherry bourbon syrup, watermelon and lobster salad and sustainably-raised Skuna Bay salmon.

There will also be handmade sausages and Charcuterie, as well as a large selection of bourbon and craft beer to wash it all down, according to the release.

Before or after a meal, bargoers can play vintage video games, including pinball. 

At Elixir Lounge Andersonville, expect small plates and bar snacks to pair with its creative and classic cocktail menu.

Serving food sets LKH Management's Andersonville locations apart from its Boystown locations (Replay, 3439 N. Halsted St.; Elixir Lounge, 3452 N. Halsted St.), as they do not offer food menus.
