New Publican Tavern At O'Hare Airport Serves Up 'Hot Doug Sohn' Dog

O'HARE AIRPORT — Travelers passing through O'Hare can now get a taste of one of Fulton Market's most loved restaurants — and one of the city's most iconic dogs — without leaving the terminal. 

Inspired by The Publican in Fulton Market, the Publican Tavern at Chicago O'Hare International Airport celebrated its grand opening Monday. The restaurant in Terminal 3 officially opened earlier this month, according to Publican staff.  

Open for breakfast, lunch and dinner, Publican Tavern will offer a menu featuring sandwiches, salads, craft beer and wine.

In a special tribute to Hot Doug's, the Avondale hot dog joint known for hours-long lines that closed in 2014, Publican Tavern will serve up the "Hot Doug Sohn," a Chicago-made bratwurst, bourbon mustard, fried shallot and Emmental cheese. 

The Sohn/Publican sausage collaboration is not a surprise — Sohn hosted a pop-up at Publican sister restaurant Publican Quality Meats in January. 

The seasonally-focused menu at Publican Tavern includes: 

•​ spicy pork rinds

•​ avocado salad

•​ pork shoulder chop

•​ organic baked salmon

• Publican Breakfast with fried eggs, toast, breakfast potatoes and bacon or sausage

• waffle with honey butter and strawberry jam

• hot smoked salmon with lemon ricotta, baby romaine, celery, butter pickle dressing and multigrain bread

A side of Burton's maple syrup-braised Publican bacon — a West Loop favorite — also makes the cut. 

With lucent globe lights, red brick walls and an open-air kitchen, Publican Tavern channels the decor at the original Publican. 

The new airport restaurant is managed by global restaurateur HMSHost, which operates restaurants in more than 120 restaurants across the globe, in partnership with Chicago-based One Off Hospitality Group, who owns Publican and Publican Quality Meats in the West Loop. 

One Off Hospitality Group owners Donnie Madia and Terry Alexander, HMSHost President Steve Johnson and Chicago Department of Aviation officials were on hand to open the new restaurant Monday. 

Ginger S. Evans, Department of Aviation commissioner, said O'Hare aims to be a dining destination for travelers. 

"We are proud to offer a delicious taste of Chicago’s world-class culinary scene in a warm and inviting space, and to introduce this unique Chicago restaurant to the airport, in partnership with HMSHost," she said in a statement.

Since closing Hot Doug's, Sohn has opened a Hot Doug's-themed concession stand at Wrigley Field, created his own Atomic Pizza with Piece Brewery for a good cause, and was honored with the "The Doug Sohn," a Chicago-style hot dog/fried chicken sandwich, at Honey Butter Fried Chicken.
