Baker Miller To Start Serving Dinner, Refocusing On Lincoln Square Shop

LINCOLN SQUARE — Three years after opening, Baker Miller is back where it started.

In the coming weeks, the bakery/cafe will add evening hours at its Lincoln Square location, 4610 N. Western Ave., something that was part of owner Dave and Megan Miller's original business plan.

"We've been promising it for years but kept shelving our evening concept because we didn't feel like we could execute it well yet. Now we feel ready," Dave Miller told DNAinfo via email.

The menu for the later service is still a work in progress but Miller said dishes would feature the bakery's signature grains.

In order to focus their attention on the Western Avenue shop, the Millers recently closed their Ravenswood Manor outpost at 4642 N. Francisco Ave., which opened in late 2015.

"We felt like that location had our fantastic pastries and some standout menu items but we often felt constrained between focusing on our bakery and customer demand for seating, menu items, etc.," Miller said.

"Recently, a friend came to us with a fantastic offer on that space. After thinking about it, we realized moving would allow us to invest into our bakery while also finally growing Western Avenue into Baker Miller All Day," he said.

The Francisco bakery had been the Millers larger production kitchen. In late September, they moved their equipment into a space in Uptown, as part of an arrangement with Everybody's Coffee.

The much larger commercial bakery will not only allow the Millers to grow their business but to maintain a greater level of consistency.

Sharing a photo of the new bakery on Instagram, they posted: "No more boiling pots of water inside of holding cabinets for makeshift proofing cabinets. We have a roll in proofer now. And an AC! And a dishwasher!"
