Gibsons Reveals New Name For 'Modern' Steakhouse On Chicago River

WEST LOOP — Gibsons' new steakhouse and bar on the Chicago River will be named in honor of the restaurant's chef, the restaurant group revealed . 

Called Coletta, the restaurant next to the new River Point tower will be named after chef John Coletta, a Gibsons partner. The modern steakhouse "with authentic Italian influences," located just west of the Chicago River at 233 N. Canal St., will open this fall. 

Coletta has been with Gibsons Restaurant Group since 2004 when he partnered with Steve Lombardo to open Quartino, where he will continue on as executive chef in addition to launching the West Loop steakhouse. 

Coletta's menu will feature a variety of seafood, shellfish, vegetables, pastas, risottos and world-class selections of beef, including Gibsons USDA Prime Angus, Australian grass-fed beef, Italian Piemontese and Japanese Kobe.

The tri-level restaurant and bar will have outdoor dining and a retractable roof on the top floor overlooking the Chicago River and the city's skyline. 

The new steakhouse, announced earlier this year, will be the restaurant group's first downtown Chicago restaurant since 2005.
