WEST TOWN — West Town's newest fine dining spot opens next week with a tasting menu focus, its owners announced.

Temporis will open Thursday at 933 N. Ashland Ave.  — about a block north of Ruxbin — and will offer "a focused experience found nowhere else," according to a news release.

The 20-seat spot will be operated by owner-chefs Sam Plotnick and Evan Fullerton, who've outfitted the dining room with custom-built tables embedded with accompaniments diners can use throughout their meal, such as herb gardens, hot rocks, frozen salt blocks and other tools.

The dining room will be "completely color controlled and temperature controlled,” with the lighting changing throughout the meal, Plotnick told Fooditor.

Plotnick and Fullerton previously met when Plotnick was working at Les Nomades, a French restaurant along the Magnificent Mile. (Read more about their backgrounds).

Serving 20 patrons in the dining room allows the chefs to hone in on each night, each dish and each diner with extreme precision, providing a more focused experience, the duo previously said.

For those wondering about the tasting menu, each evening there will be 10 to 12 dishes offered, each an elegant variation on a single ingredient, such as a sunflower. The price will be $110 per person.

Business-casual or "cocktail attire" is suggested and the vibe is described as intimate and modern on the Temporis website. Reservations for 5, 7 or 8 p.m. seatings beginning Jan. 5 can be made online.

Temporis will be open for dinner from 5-9 p.m. Tuesdays through Saturdays.
