Northman's Opening Pushed Back AGAIN

NORTH CENTER — On the eve of its highly anticipated opening, owners of The Northman announced that the cider pub wouldn't be ready after all this week.

Managing partner Aaron Zacharias, a member of a group that also runs Fountainhead, issued the following statement:

“It is important to us that every component is in place at The Northman on opening day. Chef [Sean] Sanders joined our team very close to our projected open date. What he and our staff have pulled together in that short time is pretty fantastic. We know that with this small delay, we can provide our chef and our whole team with the extra time to be sure everything that comes out of the kitchen will match our collective high standards." 

Despite a chef shake-up in mid-February — Sanders, formerly of Browntrout, stepped in when Cleetus Friedman departed Fountainhead and The Northman — Zacharias had told DNAinfo Chicago, "We're going to be totally ready" by Tuesday.

It's been a long and winding road for The Northman, first announced in January 2014.

"We are aware that many of you have been anxiously awaiting this opening," Zacharias said in his statement.

"We are confident that once we open our doors, the experience will exceed your expectations," he said. "Thank you for your continued patience."
