Armour and Swift Steakhouse Will Open in West Loop in September

FULTON MARKET — Two big names in West Loop dining have teamed up to open a steakhouse in Fulton Market later this summer.

Boka Restaurant Group and B. Hospitality Co. plan to open Armour & Swift, a chef-driven steakhouse in the 1K Fulton development in September, officials confirmed Friday. The entrance to the restaurant will be located at the corner of Morgan & Fulton.

The steakhouse plans to pay its respects to Chicago's historic meatpacking district "in the neighborhood where it all began," officials said in a press release.

Executive Chef Chris Pandel, B. Hospitality's chef partner, will also run Armour & Swift's kitchen, focusing on high-quality food using locally sourced ingredients and classic cooking techniques.

Pastry chef Meg Galus, who also works out of Boka Restaurant and Momotaro, will create a dessert program at Armour & Swift that will feature modern American desserts rooted in French technique.

Sommelier Marcello Cancelli will create a wine program with more than 600 bottles bottles of wine available for purchase and 30 wines by the glass. 

Build out of the space is outgoing, and design firm AvroKO drew inspiration from the original titans of the city's meatpacking industry from which the restaurant draws its name. The space will re-imagine "what their fictitious company's headquarters might look like in the retro-future had the two companies merged," according to a release.

Upon opening, Armour & Swift plans to feature an in-house concierge desk for guests.

Boka Restaurant Group also operates Girl & the Goat, Momotaro and Little Goat Diner in the West Loop. B. Hospitality Co. also operates Formento's and Nonna's in the West Loop.

Sterling Bay's 1000 W. Fulton Market development is also known as the Google building, a nod to one of the building's main tenants.
