Vegetarian Taqueria Coming to Howard Street Meditation Center

ROGERS PARK — A vegetarian taqueria plans to open its second location at the former Inner Metamorphosis University, a meditation center on Howard Street.

The center's main storefront, which includes a full commercial kitchen at 1418 W. Howard St., went on the market late last year. Owner Amona Buechler said she was willing to sell the building or lease the storefront.

Now, Logan Square's Quesadilla La Reina del Sur intends to open a taqueria featuring its signature vegetarian and vegan dishes, said Nancy Ruiz, whose mother, Celia Gomez, founded the family restaurant in 2013.

"We are really excited to open this spot in April," said Ruiz, 22.

Ruiz said students from Loyola University would be loyal customers once the restaurant opens.

"It’s very close to the university, so most of our customers are college students," she said. "We like serving college students."

The meditation center opened in 2005 and was once also home to Lake Side Cafe.
