WEST LOOP — An upscale tavern from the team behind Bangers & Lace and The Anthem opens this week in Fulton Market.

The Betty, at 839 W. Fulton St., will officially open to the public Wednesday.

Footman Hospitality aims to attract an eclectic crowd at the classic but contemporary neighborhood tavern, said Chris Haisma, a partner in the project.

"When someone walks into The Betty, their mood can dictate their night," Haisma said. "They can relax with a glass of wine or they can throw back a shot of bourbon. They can have a romantic date or a fun night out with friends. Above all we want our guests to have a great time.”

The West Loop spot will offer handcrafted cocktails alongside wine, craft beer and spirits. The beverage program created by bar veteran Peter Vestinos, formerly of BellyQ, will feature drinks crafted with house-made juices and small production wines.

Executive Chef Rachel Dow's menu focuses on small bites and shared plates. Offerings include kampachi crudo & marinated mussels, served with parsnip puree, kabocha chips and peppercress; warm endive & pear, served with blue cheese, sourdough croutons, and a black garlic, brown butter vinaigrette; and tikka masala-braised chicken thigh, served with sweet potato, brussels sprout, yogurt, chicken chicharones and naan.

Dow previously served as executive sous chef at Avec on Randolph.

The Betty's space, designed by Chicago-based Studio K, includes a custom chandelier and shelves full of of vintage treasures. The bar's sound borrows from the past, too - all music will be played on vinyl.

The 5,000-square-foot bar takes over the space formerly occupied by nightclub Lumen.
