Just Salad, a fast-casual salads and wraps chain, is opening its first Chicago restaurant at the historic Gibbons Building, 20 E. Jackson Blvd., the New York-based company announced Monday. The 2,200-square-foot Loop restaurant is expected to open in March.
Featuring reusable bowls and custom salad bar, Just Salad has built a loyal following in New York, with celebrities including Katie Holmes and Ludacris taking a bite. The chain operates 21 stores internationally, with menu items including a 360-calorie buffalo chicken salad (sans Ranch dressing).
"Chicago, like New York, is a fast-paced, high-energy city where people are increasingly craving healthy, high-quality food at an affordable price," Just Salad Managing Partner Nick Kenner said in a statement. "It's a natural fit for Just Salad to enter this market."
The lease is also a coup for Chicago developer CA Ventures LLC, which is converting the vintage Gibbons building to student housing. CA CEO Tom Scott did not immediately return a message.
