Dollop Coffee Company Opening South Loop Location

SOUTH LOOP — Chicago-based Dollop Coffee Company will open its fifth location in the South Loop this spring.

Owner Dan Weiss announced Friday that he secured space in the Fisher Building at 343 S. Dearborn St. and hopes to open the South Loop Dollop Coffee Company outpost in late May or early June.

Weiss said his philosophy with new neighborhood coffee shops is to "start minimally, and then you let the neighborhood dictate what they want from it."

"I don't want to think I understand what any neighborhood wants," he said when opening the Streeterville Dollop last winter.

As at previous locations, the Fisher Building cafe will serve java supplied by locally-based Metropolis Coffee Company, and baked goods from Hoosier Mama Pie Company, another hometown hero.

"Combine Dollop's unparalleled retail touch with Metropolis' storied tradition of sourcing and roasting the finest coffee, add food from Hoosier Mama Pie Company, and well,...we have a new Chicago staple," said Tony Dreyfuss, co-owner of Metropolis, in a statement announcing the new location.

Weiss called the Fisher Building location "truly an ideal spot for this new concept" in the same release.

"I think we will fit right in to the community, and we feel like collaborating with our friends at Metropolis is the perfect next step for us," he said.

The shop will feature two separate check out lines: one for customers dining in, and a "fast lane" for people grabbing coffee or a bite to go.
