Twist Closing After 12 Yrs., But Co-Owner Opening New Spot in Rogers Park

LAKEVIEW — A neighborhood tapas restaurant is shuttering its Lakeview location, but a co-owner and head chef plan to open up an eatery with a similar concept in Rogers Park.

Twist, 3412 N. Sheffield Ave., will shutter on Oct. 26 after 12 years in the neighborhood. 

But head chef Mauricio Correa and many of the staff will join co-owner Bob Parilla at a new spot, Twisted Tapas, at 1146 W. Pratt Blvd., Parilla said. Twist favorites such as jalapeno gnocchi, bacon-wrapped dates and the mac and cheese will be reappearing at Twisted Tapas, Parilla said.

He hopes to open in the next month.

Parilla and Twist co-owner Chris Seiberlich didn't want to leave the Lakeview location. But the building sold last year, and the new landlord wanted to redo the storefronts, Parilla said.

The two sought other options to stay in the neighborhood, Seiberlich said. Nothing panned out. 

"It's been a great experience," she said. "We appreciate the neighborhood. It has been nothing but great."

Seiberlich will not be joining the Rogers Park enterprise.

Twist's shuttering is "bittersweet," Parilla said. Many of the staff have been around for years, and relationships with regular neighborhood customers drove business, he said. 

Parilla's not sure if those regulars will make the trek up to Rogers Park, but he's hopeful considering growth in the northern neighborhood, he said.

"It seems like it's a good location — lot of hipster young kids, families and strollers," Parilla said. "It's definitely come a long way in the last 10 years."
