DOWNTOWN — Gibsons plans to open its new Italian restaurant later this month on the Chicago River.

The steakhouse is eyeing an Oct. 23 opening for Gibsons Italia, its eponymous new Italian restaurant at 233 N. Canal St., a Gibsons spokeswoman said.

Menus are still being finalized, but Gibsons promises a "modern Italian steakhouse" with plates including beef brisket and veal shoulder meatballs, imported prosciutto and a "tour of beef" with Gibsons Prime Angus.

"Gibsons Italia represents the next evolution of Gibsons Restaurant Group, while carrying on the legacy of top-notch hospitality and food associated with its name," the spokeswoman said in a statement.

Chef José Sosa, a Gibsons veteran, is handling the menu.

The restaurant will also include a retractable rooftop bar that will open to the public next year. Until then, the rooftop can be reserved for private events.

Gibsons Restaurant Group runs its namesake steakhouse in the Gold Coast as well as the nearby Luxbar, Hugo's Frog Bar & Fish House and Quartino Ristorante.
