Truth Italian Eatery Adds BBQ Ribs, Tips And Wings To Menu

BRONZEVILLE — Truth, Bronzeville's Italian eatery, has added a whole new category of food: barbecue.

Former celebrity stylist Peytyn Willborn hired a master barbecue chef earlier this month at her restaurant at 56 E. Pershing Road. Customers can still order Italian dishes, but a separate menu, labeled the "Truth Rib Cage," now features smoked chicken wings, rib tips and ribs.

The meats are smoked on site with a special house rub. There are five in-house made sauces and so far, the most popular sauces are jerk, bourbon and beer.

Willborn, who recently landed a role in Lifetime's new reality series "Bringing Up Ballers," said she wanted to offer a wider variety of food to keep her existing customers happy and to attract new people.

"I was sitting down one day, and I'm always trying to be creative, be innovative and stay trendy," she said. "I'm like, 'Truth has been open for almost three years now, what can I do to keep it standing tall and have people continue to support it?'"

"I did my research and Bronzeville needed a good tasty barbecue place," Willborn said. "There are no day-old ribs here. We throw them out."

She said people will be pleased with the new selections and that the special sauces are "off the chain."

Truth's kitchen is open daily, Monday to Sunday from 4 p.m. to 11 p.m. Barbecue is offered Wednesday through Sunday.
