Chicago's First Caviar Bar Opens Next Week

HUMBOLDT PARK — The bar/restaurant taking over Bar Marta, billed as Chicago's first caviar bar, opens next week in Humboldt Park.

Heritage Restaurant & Caviar Bar, 2700 W. Chicago Ave., will makes its public debut Aug. 11, the ownership team announced Wednesday.

Chef Guy Meikle, who ran the kitchen at Nana Organic in Bridgeport, is behind Heritage, which will serve an Eastern European-inspired menu that runs the gamut from fresh oysters and smoked fish to, of course, a variety of caviar.

"When we were designing the menu, we wanted to honor parts of mine and my staff's past," said Meikle, who grew up on the South Side at 55th Street and Kedzie Avenue, which was primarily Polish and Czech at the time.

For drinks, patrons can expect cocktails galore crafted by beverage director Jan Henrichsen, formerly of Fat Rice and Pastoral.

Heritage will serve breakfast, lunch and dinner seven days a week. In addition to the main dining room and bar seating, the bar/restaurant has an outdoor patio.
