Kitsune Announces Opening Date, Will Serve 'Kaiseki' Brunch

NORTH CENTER — Kitsune, the long awaited Japanese-inspired restaurant from Iliana Regan, will open Jan. 20, the chef announced Monday.

A link to Kitsune's reservation site will be made available within the next day or two; members of the restaurant's mailing list (sign up here) will be the first to receive the link, Regan posted to social media, adding that reservations will not be taken via phone or email.

Hours for the opening weekend will be 5-10 p.m., limited to dinner service, 4229 N. Lincoln Ave.

Additional options will be added the following week, with regular hours commencing Jan. 31.

On Fridays and Saturdays, snacks and ramen will be available 11 a.m. to 2 p.m.

On Sundays, Kitsune will offer kaiseki-style brunch, 11 a.m. to 2 p.m., $40 per person.

Kaiseki, dubbed "the world's finest meal" by some, is a multi-course Japanese meal of meticulously prepared, exquisitely plated dishes.

Typical courses include a simmered dish, a sashimi dish, a rice dish, a grilled dish and dessert and a matcha tea ceremony to end the meal.

Hallmarks of the kaiseki tradition include incorporating seasonal ingredients and aspects of a restaurant's surrounding environment into the food.

All of Kitsune's menus are based on a "purity of ingredients from our local farmers and gardens," according to the restaurant's website.

"Our mission begins with sustainable cuisine, dedicated to earth consciousness, and from there we expand," according to the description. "We use nearly all of our ingredients from the root to leaf and head to tail."

Regan has been planning Kitsune since September 2015. She also operates the Michelin-starred Elizabeth at 4835 N. Western Ave.
