OLD IRVING PARK — The long-awaited Old Irving Brewing is in hiring mode, with a mid-September opening in its sights.

Owners of the brewery and brewpub at 4419 W. Montrose Ave. posted a call for servers, cooks, bartenders and more to Facebook, "as we creep closer to opening day."

Asked when that opening day might be, owners responded, "Still shooting for mid-September."

The brewery has been teasing patrons with images of its wood-fired grill and chef Michael Shrader's menu items in development.

On the beer side, a collaboration between Pipeworks and Old Irving Brewing hit the shelves earlier this month, and the brewery's Scentinel IPA took home best beer honors at the recent Beer & BBQ Challenge.

Old Irving Brewing was originally planned as Crooked Fork, the brainchild of the late chef Homaro Cantu, who committed suicide in 2015.

Jeff Linnemeyer, an Old Irving neighbor of Cantu's, was the lead investor in Crooked Fork and continued to develop the project with head brewer Trevor Rose-Hamblin, a Cantu protégée.

Chef Matthias Merges, another Old Irving resident whose Folkart Restaurant Management group includes Finch Kitchen brewpub, also joined the team.
