
WEST LOOP — If 4/20 were a taco, what kind of taco would it be?
Turns out the ultimate "late-night munchie special" should most definitely include bacon, pork rind, and cheese, according to celebrity Chef Rick Bayless' stoner-friendly Taco Tuesday recipe. In a new video, Bayless shares his latest, greatest taco fix with Frontera fans and ganja fans in advance of the unofficial holiday known as "National Weed Day" on 4/20.
Bayless starts the video with some psychedelic bloopers, including a scene where he spies a Frontera brand package bearing his image and says, "Is that me? Hi little Ricky!"
Although a "good number of people" think the chef's mellow enthusiasm is a result of "a little weed," Bayless says in the video's description that "he never touches the stuff."
"Well, certainly not recently (remember I came of age in the '60s)," writes Bayless, who plans to open Leña Brava and Cruz Blanca Cerveceria in the West Loop this spring. "Besides, I'm a mezcal man."
You'll need seven common ingredients to cook up Bayless' 4/20 taco: bacon, onions, potatoes, cheese, hot sauce, tortillas and chicharrón — also known as pork rinds.
