Do-Rite Donuts Pinch Hitting at Beans and Bagels as Cafe Drafts New Baker

LINCOLN SQUARE — Beans & Bagels Rockwell lost a key player in its lineup when pastry chef Jean-Yves Martin unexpectedly resigned two weeks ago.

"We are thankful for the six years he worked with us and wish him the best," said Beans manager Adam Snow, who had no additional details on the future plans of the intensely private Martin.

To plug the croissant-sized hole in its offerings, the cafe, 2601 W. Leland Ave., has called up an experienced pinch hitter: Do-Rite Donuts.

But don't get too attached to this substitute.

According to Snow, Beans is interviewing candidates to replace Martin, with an eye toward hiring someone with a similar background in classic French pastries.

"We will continue to offer Do-Rite Donuts until a new bakery staff is assembled and ready to go," Snow said.
