Paris Club's Five-Course Truffle Dinner Serves Rare Fungus for $150 a Plate

RIVER NORTH — Truffle buffs should plan to sniff out a table at Paris Club Bistro and Bar Sept. 23 for a five-course dinner celebrating both black and white varieties of the prized mushroom.

The opportunity to taste white and black truffles together is a rare treat, according to Paris Club Chef Doug Psaltis.

"Black truffle season is coming to an end, and white truffles from Alba are in season early," Psaltis said. "We are excited to showcase them together."

Psaltis' concoctions include two white truffle dishes — one with poached egg and polenta, another built around sea scallops — a chicken and lobster fricassee served with sauce albufera and crushed black truffle and a prime beef with roasted mushroom.

For dessert, the dinner will close with Fourme D’Ambert cheese served with a black truffle and apple marmalade. The meal includes wine pairings and costs $150 per person, excluding tax and tip.

"We love to utilize the most seasonal and top-quality ingredients," Psaltis said. "By hosting this upcoming dinner, we have the unique opportunity to not only celebrate the world's best truffles but also give our guests the opportunity to taste them."
