UPTOWN — Bow Truss Coffee Roasters will open one of its upcoming Uptown coffee shops on Halloween, according to its owner.

The cafe planned at the intersection of Clark Street and Lawrence Avenue was originally expected to open this summer, but has pushed back its opening day "to train baristas to our standards" as the independent coffee roasters open multiple shops across the city, according to owner Philip Tadros.

"Everything is delayed to ensure quality," said Tadros, 36. "I'd rather have things delayed and prepared the Bow Truss way."

The company is also negotiating a lease to bring another shop near Dollop Coffee, at 4181 N. Clarendon Ave.

The coffee roaster has eight shops in Chicago, and the brand is considered one of the biggest indie coffee chains in the city. The company is expecting to grow to 24 shops in the next two years, Tadros said.

The company doesn't want "to lose quality in growth, and so far we haven't and will continue to make sure consistent coffees are prepared to our standards," Tadros said.

He said there has been a "boom in barista applicants" and the company is "doubling down on education and building a public facing and internal lab for education and classes."

Tadros said he chose the location for the shop at 4756 N. Clark St. because "it's a big corner with not really much around" and he believes it will be a future hub in the neighborhood.

The location was previously a shoe store, which moved a few blocks west on Lawrence Avenue a few months ago.
