Check Out Swift & Sons' Full Menu Before It Opens in West Loop Sunday

FULTON MARKET — Boka Restaurant Group and B. Hospitality Co.'s joint steakhouse venture will open this weekend.

The dining giants will open the 8,000-square-foot steakhouse Swift & Sons in the 1K Fulton building at the corner of Morgan & Fulton Sunday, officials confirmed Thursday. 

Executive Chef Chris Pandel, B. Hospitality's chef partner who also runs Balena in Lincoln Park, leads Swift & Sons' kitchen, with help from pastry chef Meg Galus, sommelier Marcello Cancelli and beverage director Allie Kim.

Rob Katz, co-owner of Boka Restaurant Group, said the team is excited to open the steakhouse in the neighborhood "that first put Chicago on the map as a steak destination."

“The Fulton Market District has steak in its heart and soul and we plan to celebrate the West Loop’s heritage with one of the most classic restaurant concepts," Katz said.

The menu includes:

• A cold seafood tower of prawns, king crab, oysters, clams and bay scallops

• Roast chicken Grand Mere

• Trout Amandine

• Lobster a la nage with Champagne, fennel and fines herbs

• And lots of beef, including: a 38-ounce dry-aged Cote de Boeuf; a 36-ounce Porterhouse; a 24-ounce bone-in ribeye; 14-ounce bone-in filet and A5 Japanese Wagyu.

Cocktails will be available tableside from the restaurant's custom martini cart, and the restaurant will also offer more than 600 bottles of wine and 30 wines by the glass.

In August, Boka Restaurant Group and B. Hospitality Co. announced they would rename the Fulton Market steakhouse after Armour-Eckrich Meats filed a lawsuit demanding the restaurateurs drop the Armour name. The restaurant was previously slated to be called Armour & Swift.

The restaurant was originally scheduled to open in September.
