Spilt Milk Cocktails Bring Old Pharmacy Vibes To Logan's Booming Bar Scene

LOGAN SQUARE — A new cocktail bar in a former pharmacy is set to open in Logan Square Thursday.

Spilt Milk promises to pay homage to the former pharmacy and its Prohibition-era pharmacists at 2758 W. Fullerton Ave.

“Spilt Milk Tavern will redefine the bar experience,” said Chris Haisma, a Footman Hospitality partner, in a statement announcing the opening. “The concept will encompass everything that we think it means to be a great neighborhood tavern, while simultaneously offering a level of product and hospitality that make it a destination spot.” 

The drinks will be a play on the building's original purpose as a pharmacy including a Concord Grape Julep with grape juice, bourbon and cognac, a Sarsaparilla Zazerac with bourbon, marsala sarsaparilla syrup, bitters, crème de noyaux and absinthe and the Pink Lemonade with vodka, clarified milk, white port and lemon peel.

Spilt Milk, a corner bar at Fullerton and California, will feature 60 seats in a long narrow setting.

The project is a joint venture between veterans of a number of bar and restaurant groups that include co-founders of Equal Parts Hospitality, Matty Eggleston, Tony Selna and Jason Turley, alongside Chris Haisma, Jason Freiman, and Nick Podesta of Footman Hospitality.

Their backgrounds include bartending in some of the city's top establishments including Nico Osteria, The J. Parker, Bar Deville and Lone Wolf.

The bar is the latest to open in Logan Square this year, which has been booming in popularity with the recent additions of Estereo and Surf and the upcoming Bonny's replacement and Deadbolt in the former Two Way later this year.
