No Changes At Analogue Despite Chef Shake-Up, General Manager Says

LOGAN SQUARE — Despite a shakeup that resulted in Analogue's chef and two founders leaving the restaurant, the management of the Logan Square bar and restaurant said customers won't see any changes.

Chef Alfredo Nogueira is leaving the restaurant at the end of the week and managers Henry Prendergast and Robby Haynes, both who helped found Analogue, are also departing.

"As surprising as the news may be, though, I believe the biggest surprise will be how little we are changing," Scott Crawford, general manager of Analogue, wrote in a letter to customers.

The ownership of the restaurant will remain the same and the concept is not changing, according to Crawford.

Dani Kaplan, who worked at Nogueira's sous chef since the restaurant/bar opened in 2013, is taking over the kitchen.

"She has been Alfredo's overqualified Sous Chef since the beginning, and has been transitioning into the role for some time," Crawford said in an email. "She is well-versed in the Analogue menu, and has tons of industry experience in Chicago — not just with us."

Analogue, 2523 N. Milwaukee Ave., was launched as a cocktail bar by Violet Hour veterans, but has become well known for its Cajun food.

"The fact that we couldn’t contain all of them in our tiny restaurant only signals the potential they have to do big post-Analogue things," Crawford said.
