Star Chicago Pastry Chef Mindy Segal Making Marijuana-Laced Sweets

BUCKTOWN — As your college roommate will tell you, making a pot cookie that doesn't taste like garbage is a challenge. Fortunately for medical marijuana patients, one of Chicago's most celebrated pastry chefs is launching her own line of cannabis-infused desserts. 

Mindy Segal, the James Beard Award-winning chef behind Bucktown's Hot Chocolate restaurant, is partnering with Cresco Labs to create a line of marijuana-infused chocolate brittle bars, granola bites and, of course, hot chocolate. 

“We’ve all heard the expression ‘it tastes like medicine’ but there’s no reason it has to,” Segal said in a statement. “With my recipes and Cresco’s technology, we’re developing this line of products to be consistent every time and absolutely enjoyable to eat,” she added. 

Cresco is the largest marijuana cultivator in the state, and they will begin distributing the weed-laced goodies in late February. There will be more recipes added from there. 

Segal, who won the James Beard Foundation Award for Outstanding Pastry Chef in the Country in 2012 and was nominated in that category prior to that, considers the foray into the medical marijuana world part of her ongoing philanthropy efforts.

"Having someone with Mindy’s name brand and credibility enter the cannabis industry says a lot about where this industry is headed,” said Charles Bachtell, Cresco Labs Founder, in a statement.

The products will be available at licensed dispensaries across Illinois for patients with approved medical conditions.
