Forbidden Root Releases Flagship Botanic Beer

CHICAGO — Bottoms up, Chicago.

Small-batch brewer Forbidden Root has released its flagship beer, also called Forbidden Root. Truly a root beer, Forbidden Root, is described as "an oak-aged mild ale blended with 20 plants and botannicals," according to a release from the brewery.

The brewery also enlisted Liz Solheim to craft recipes and pairing suggestions for the new brew.

In September, Forbidden Root released two beers, Sublime Ginger and Shady Character. The Forbidden Root beer is available at a number of area locations, including Noble Grape, 802 N. Bishop Ave.; Bottles & Cans, 4109 N. Lincoln Ave.; Beermiscous, 2812 N. Lincoln Ave.; and Beer Temple, 3185 N. Elston Ave.

Next year, Forbidden Root plans on opening a West Town brewpub in the former Hub Theater, 1746 W. Chicago Ave.

The brewery prides itself on using a "heretofore dormant subcategory" of brewing using roots, spices and herbs to create flavorful beers.
