His firm Zero Percent hopes to bring food waste in Chicago down to just that — zero. Using new technologies and creative revenue streams, the Lakeview resident and his crew are off to a fast start.
On the giving end, Lou Malnati's, The Signature Room, Eataly, Yolk, Hannah's Bretzel and The Market Place Foodstore are among the early adopters. And receiving the food — for 30 cents a pound — are more than 25 non-profits that have signed up for Zero Percent's services.
