Field Museum and Off Color Brew Up 'Tooth And Claw'

CHICAGO — "Hops, pulverized dino teeth, malt."

Those are the alleged ingredients in "Tooth & Claw," a new beer developed by Logan Square's Off Color Brewing that will be available exclusively at the Field Museum starting Friday.

The name of the dry hop lager is inspired by the museum's most famous resident, Sue the T-Rex.

"The original name was going to be 'Sue Brew,' but Sue is such an educational icon," said Megan Beckert, the museum's director of special events. "Mixing beer with children, might not be accepted. I needed to do something evocative of Sue and a dinosaur, so I thought of tooth and claw."

Museum supporters have long pushed for creating a wine label bearing the museum's name, but Beckert said after a discussion with John Laffler and Dave Bleitner, founders of Off Color, brewing an original beer was the best decision.

"It is phenomenal," Beckert said. "When I tasted it, I was like now we are in business."

The 4.8-percent alcohol beer will be available on tap at The Field Bistro, a new restaurant opening at the museum Friday. It will also be bottled for special events at the museum, said Beckert.
