Cronut Craze Reinvented at Le Petit Bakery on Myrtle Avenue in Fort Greene

FORT GREENE — Brooklynites on a cronut kick can now get their fix in Fort Greene.

The cronut, a croissant-donut hybrid, hit the bakery scene in Manhattan earlier this year and still draws lines outside the Dominique Ansel bakery where it was first created.

But now a small Myrtle Avenue bakery has coined its own version of the trademarked treat — the "squat." And unlike the cronut, squats are shaped like a square but they still have the signature crispy, buttery insides of a croissant and deep-fried outside of a donut.

"I make my own croissants, we fry pastries, and I have all the great toppings and fillings so I thought, 'why not?,' Le Petit Bakery owner Christopher Sanchez said. "We call them 'squats' because after eating one you have to hit the gym and work out."

Squats have been available at Le Petit for a little over a week and their appearance has already tripled the bakery's pastry sales.

And unlike the Soho bakery where customers are limited to two cronuts per purchase, Le Petit allows patrons to buy as many squats as they like — as long as supplies last.

"We make around 50 a day and sell out about by 11 a.m. or earlier," Sanchez said. "People buy quite a few — four, five, six."

On a recent Sunday morning Le Petit had maple-bacon squats on sale, but bakers have also experimented with vanilla spice, chocolate filled with bacon, and blueberry-lemon glaze and they are continuously working on new flavors.
