CARROLL GARDENS — The coats are being shed, the snow is melting, and a new ice cream company is getting ready for the warmer months with frosty treats in Carroll Gardens.
Hay Rosie Craft Ice Cream Company, is planning to set up a small wholesale distribution space and production facility at 204 Sackett Street, near Henry Street, according to founder Stef Ferrari, 29.
She also hopes to build an ice-cream tasting room, where customers can sample flavors such as "Sriracha Popcorn" and “Burnt Caramel with Sea Salt and Dehydrated Honey” and watch ice cream being made.
Ferrari launched an Indiegogo campaign to raise $16,750 so she can buy dipping cabinets, to-go freezers, cash registers and refrigerators to help deck out the tasting room.
After working in the advertising industry, Ferrari, shifted her career to working at a craft brewery in Southern California.
But she always found herself moving back to her real passion — ice cream.
“Typically I am thinking about ice cream one way or another,” said Ferrari who named the company after her mother, Rose.
Ferrari moved to Carroll Gardens three years ago and while she considered opening a small brewery or a pub, she decided to follow her sweet tooth into the ice-cream-making business.
Inspired by tasting rooms in breweries, where patrons sample beers and speak to experts about their work, she hopes to bring the concept to Hay Rosie’s.
She plans to make a range of flavors with ingredients like maraschino liqueur and almonds, caramel and homemade peanut butter cups and an oatmeal ice cream base with a butterscotch swirl and Scotch-spiked shortbread pieces.
“The beauty of ice cream is that it is such a blank canvas,” Ferrari said.
