Kittery serves Classic Seafood of Maine in Brooklyn

CARROLL GARDENS — Kittery, a seafood shack expected to serve classic Atlantic seafood cuisine, will open its doors in the next few weeks, said the restaurant's chef.

Kittery, located at 305 Smith St., will be serving Atlantic seafood, inspired by the classic cuisine of Kittery, Maine. The menu will include fried clams, lobster rolls, oysters, scallops and fish filets.

“It’s like when you’re on a vacation, sitting at a picnic table by the ocean and eating really good seafood,” said Joshua Moulton, chef of Kittery.

The new seafood joint will feature a bar, and indoor and outdoor seating, said Moulton, who was born in Boston, but lived in Maine for the early part of his life. Instead of revisioning classic recipes like clam chowder, Moulton says it's important to keep to the way it's always been made.

“I grew up with this stuff,” said Moulton. “When I tried clam chowder somewhere the other day, it had turnips in the chowder. It was fine, but you never put turnips in clam chowder.

Even the type of fish used for fish and chips, you don’t want to screw around with. I'm looking for authenticity. I’m looking for that flavor of when I was a kid."

The restaurant will be getting its seafood from local sources, which have great squid, scallops, oysters and filet fish, said Moulton, but the shellfish will be coming straight from Kittery.

Kittery replaces the Mexican restaurant Diego, which closed less than a year after it opened last year. Previously, the space was home to Union Café.
