GREENPOINT — When Aneta Szot turned her painting skills to decorating cakes, the Polish immigrant had no idea of the attention she was going to get.
"We can't handle the demand here," she said of her shop Cookie Road, which has been open on Franklin Avenue since 2009. "We have a lot of customers, and not enough space."
The desire for her rainbow butterfly cookies, her red velvet cake and her macarons has exploded so much that she said she had no choice but to expand.
So, by the end of August, a second Cookie Road at 659 Manhattan Ave. will offer Szot's sweets, plus hot sandwiches, beer, wine and table seating, she said.
"We'll have longer hours there," she said of the new spot, which might open at 7 a.m. (rather than 8 a.m. at the Franklin Avenue location) and will stay open through the evenings.
"It's the same vibe there, but a little darker colors on the walls."
As Szot modestly spoke of her business, customers poured through the door, including one couple who had bought their wedding cake from Szot.
"There's some of it sitting in the freezer," the bride Sonia Zakow said of the red velvet cake topper. "It's almost our one-year anniversary and I can't wait to eat it."
Szot, who came to Brooklyn 20 years ago and opened Cookie Road with her husband, said she felt she'd found her niche.
"I was always interested in baking...I think I'm better at this than art," she said. "We're growing every day."
