Dickson's Farmstand Meats Opens Pickle Shop in Chelsea Market

CHELSEA — A pickle stand selling everything from classic cucumber pickles to kimchi has set up shop in Chelsea Market.

Dickson’s Fine Brines, which uses a range of “cross-cultural, traditional” fermentation methods to make its products, officially opened Tuesday, the shop said.

Proprietor Jacob Dickson also owns Dickson’s Farmstand Meats inside the market.

“When I was a young boy, my family made pilgrimages to the Lower East Side, to Guss’ Pickles, for ‘the pickle run’ at least three times a year,” Dickson said in a statement.

“With Dickson’s Fine Brines, we hope to reinvent the Guss’ pickle model and experience for the 21st century,” he added.

The shop sells a range of fermented vegetables, including hot and sweet peppers, cauliflower and green tomatoes, as well as condiments like sauerkraut and fermented hot sauce.

It will also sell do-it-yourself pickling kits.
