Melt Shop's Gourmet Grilled Cheese Coming to FiDi in May

FINANCIAL DISTRICT — The gooey goodness of grilled cheese is on its way to Fulton Street.

Gourmet grilled cheese mini-chain Melt Shop is slated to open its fourth location at 111 Fulton St. in early May, the company said.

"We chose the location because it's positioned well between the Seaport and World Trade Center," founder Spencer Rubin in a statement to DNAinfo New York. "The location sees heavy foot traffic Monday to Friday and with the addition of the new Fulton Center we expect those numbers to get even better."

The fast-casual eatery offers a variety of grilled cheese options — including classic American cheese sandwiches, or ones with a more gourmet taste, like havarti, truffle oil and arugula on sourdough — as well as salads, shakes and burgers.

Melt Shop won support from CB1 for its beer and wine application at a meeting in February. It’s set to open next to another burgeoning chain, Bareburger.
