WILLIAMSBURG — Celeb chef Wylie Dufresne, known for his embrace of molecular gastronomy, will open a donut and coffee shop inside the brand new William Vale Hotel, he said Tuesday afternoon.
Dufresne announced his new venture, Du's Donuts and Coffee, on Twitter.

Dufresne, who has acted as a judge on "Top Chef" and earned himself a James Beard award for best NYC chef in 2013, has garnered praise for concoctions like fried mayonnaise and pickled beef tongue and his use of molecular gastronomy, in which chefs introduce science to cooking.
He ran several now-shuttered restaurants in Manhattan including wd~50, where he won a Michelin star, and Alder, which closed last year.
Dufresne was going to open a new hotel in the Financial District, but those plans fell through, Grub Street previously reported.
The towering William Vale Hotel opened Thursday with rooms that run between $400 and $800 a night, according to its website.
It's wasn't immediately clear when the donut shop would open. Dufresne did not immediately respond to a request for more information.
