$4-$9 Cocktails on Tap Offered at New Bar by Owners of Dear Bushwick

BUSHWICK — Volume, volume, volume.

That's how a new Wilson Avenue bar featuring 20 ready-made cocktails on tap is promising its customers cheaper prices and greater consistency, according to the two owners who also run Dear Bushwick next door.

"Yours Sincerely Cocktail Laboratory" will open on New Years Eve at 41 Wilson Ave., and will offer customers exotic concoctions with medium-shelf liquor on tap in addition to three house-made sodas, six craft beers, two wines and a whiskey.

The fact that they'll be mixing up beverages in bulk means they can cut costs and will be charging between $4 and $9 for specialty drinks like their "Pineapple Express" (Coconut-infused Denizen rum, organic pineapple juice and vanilla coconut syrup) and "Chaos Theory" (Jamaican Jerk-steeped Owney’s rum, with bourbon, molasses and mole bitters).

"[You] can expect the perfect drink every time,” said U.K.-native Julian Mohamed the co-owner of Dear Bushwick and now Yours Sincerely.

Mohamed and his partner Darren Grenia, both 38, opened Dear Bushwick five years ago, featuring cuisine from the English countryside.

They've been considering what to do with the rest of their space for several years, Mohamed said.

On a trip through England two years ago, Grenia and Mohamed found inspiration from a cocktail bar in London called White Lyan, which pre-mixed all its cocktails, measured out all proportions using scales instead of measuring cups and stored them in large refrigerators behind the bar.

"That bar just blew everyone else out the water," he said.

Yours Sincerely Cocktail Laboratory opens on Dec. 31 at 5 p.m. and will be open Monday through Saturdays from 5 p.m. to 2 a.m. and Sundays from 5 p.m. to midnight.
