
CROWN HEIGHTS — A new ice cream and doughnut shop is opening in Crown Heights this weekend, replacing a former coffee shop on Bergen Street near Classon Avenue, its owners said.
Elsie’s Parlor, owned by Jeremy Mustakas, will open at 667 Classon Ave. on Saturday, June 6, serving treats with locally-sourced ingredients like brown butter and cinnamon ice cream, he said, and a "confettura di fichi" doughnut (glazed with mascarpone, stuffed with fig jam and topped with honey and almonds).
Mustakas previously operated Crosby Coffee at the same location, which he closed earlier this year to make way for Elsie’s, named for his grandmother. The new space is an extension of Elsie’s Doughnuts, a coffee-and-doughnuts takeout operation Mustakas opened nearby on Bergen Street near Rogers Avenue in January.
The new “parlor” will feature large stained glass windows and marble countertops, he said, and will continue to serve espresso, as Crosby Coffee did.

The shop will open at 7 a.m. on Saturday and will operate seven days a week from 7 a.m. to midnight.
