GREENPOINT — Bitters aren't just for fancy cocktails.

An upstate herb farmer aims to teach locals how to make bitters — a liquid produced from herbs, alcohol and water — for their health benefits.

Dana Eudy, owner of Field Apothecary and Herb Farm in Germantown, N.Y., said she drops bitters into water every morning to "kickstart" her digestive system before the day begins.

She hopes to expose others to the benefits at the workshop, which is set for Thursday in Greenpoint.

"I don't think people realize why they're taking bitters," Eudy said. "They're doing it from purely a pleasure standpoint. But there's such healing and health benefits as well."

Eudy will teach people about different types of herbs and how they can be combined to make various bitters.

Recipes for coffee cardamom bitters, curry bitters, garden bitters and more will be offered. Materials, including herbs, alcohol, mason jars and cheesecloth, will be provided.

Eudy won't be teaching how to make cocktails with the bitters — though once attendees take the bitters home, they can decide how to use them.

After participants learn how herbs can impact health, they may start putting bitters into their diet regularly without all the booze, Eudy noted.

"When you experience the herbs," she said, "it opens a whole new world."

The class, hosted by Verdant Beauty, will take place between 6 and 9 p.m. Thursday at the Maha Rose Center for Healing at 97 Green St. Tickets are $75.
