QUEENS — A new Italian-style bistro, scheduled to open this spring in Forest Hills is tossing out the idea of serving pizza by the slice in favor of dishing it up by the inch, the owner said.
The bistro will open at 110-60 Queens Blvd., replacing Just Like Mother’s, a Polish restaurant which closed last year.
The new restaurant is the second Forest Hills enterprise owned by Marco Delpeschio and Roberto Lamorte, who also own Tuscan Hills, an Italian restaurant, seven blocks away from the new bistro, which has not yet been named.
Like the now-shuttered Pinch in Flatiron, the Queens eatery hopes to take a bite out of the market with the concept.
“We saw that concept [of selling pizza by the inch] in Italy and people really liked it,” said Delpeschio, 41.
He said selling pizza by the inch gives customers more choices as to how much they would like to eat.
“They can order one inch, or they can order one yard,” he joked.
The bistro will be selling a variety of brick oven pizzas, from margheritas to salami, but they will be baked in a rectangular shape instead of the traditional circular pizza shape, Delpeschio said.
He also said the bistro will serve breakfast, lunch and dinner.
Breakfast options will include bagels, cornettis and other Italian pastries and omelets, as well as espresso and cappuccino.
For lunch and dinner, patrons will have a choice of pasta, pizza and salads.
“The menu will be totally different from what we offer at Tuscan Hills,” Delpeschio said. “It will be much lighter.”
Delpeschio said he expects the construction, which will include the installation of a brick oven, to take about two months.
