Bagel-Themed Sushi Joins Brunch Menu at UES Steakhouse

UPPER EAST SIDE — Sushi has befriended the bloody mary.

At Arlington Club, chef Laurent Tourondel's steak-and-sushi restaurant that opened last November, a new brunch menu launching Saturday will boast bagel-themed sushi.

The "everything smoked salmon" sushi brings together traditional bagel toppings — such as smoked salmon, cream cheese and scallions — with asparagus and daikon.

"Brunch means something different for everyone," Tourondel, 46, said in an email. "For some, who are early risers like myself, brunch is a midday meal and a customer might want to order a more fitting lunch item; for others, they’ll lean towards our more breakfast-y items, which is exactly what I aimed for with this menu."

Other nontraditional items like poached egg and short rib popovers will be served alongside familiar favorites including huevos rancheros and challah French toast with rum-caramelized bananas and roasted pecans.

The food and cocktail menu at the restaurant — which is located at 1032 Lexington Ave. near East 74th Street — wasn't quite finalized on Friday, but dishes will cost about $14 to $24, Tourondel said.

The dishes were inspired by Tourondel's travels through the United States, which showed him different regions' approaches to brunch, said the chef, who is a native of Montlucon, France.

"This menu reflects my interpretations of these classic American dishes, and how I have reimagined them: huevos rancheros, eggs and popovers, and my own take on the eggs benedict," Tourondel said.  "I like to incorporate familiar elements in the American style of cooking and use this in new ways."
