Suzume to Serve Sustainable Sushi on Lorimer Street

WILLIAMSBURG — Raw fish and ramen are landing by the Lorimer Street L train stop, with the sustainable sushi eatery Suzume — Japanese for "sparrow."

"Going out I never know where the fish is coming from," said Sam Barron, owner and designer of the future corner eatery on Lorimer and Devoe Streets near Second Stop Cafe. "We hope to buy our fish directly from fishermen."

Barron, a carpenter who already owns the restaurant Maggie Brown and The Emerson bar in Clinton Hill, said an accomplished Manhattan sushi artist who once worked at SoHo's Bond Street Restaurant would be his chef, but declined to give his name noting that his partner had not yet left his current job.

The space, which Barron is designing with natural wood for a "refined casual" atmosphere, will seat about 30 people when they open in four or five months, and will serve all small plates, he said.

"I like the area, and it's right by the L and G trains," he said. "My partner lives in the neighborhood...It's a great spot."
