WICKER PARK —   Umami Burger, the Wicker Park outpost of a California-based burger chain, has debuted a new item: the Throwback Burger.

Added to the menu this week, the Throwback Burger combines two Umami beef patties, white cheddar cheese, house made ketchup, miso mustard, soy pickles and minced onions.

The Throwback burger costs $8; the majority of burgers on Umami's menu are around $12.

Veronica Rathburn, an Umami Burger spokeswoman, said that the idea behind the burger, which is available at all Umami locations, is that it's a "throwback" to the classic American double cheeseburger, but "amplified with Umami flavors."

Umami's burgers are made with a briney sauce that includes soy, anchovies and vinegar that, one critic says, "stuff you and make you want more."

Though many burgers on Umami's menu have unique ingredients such as Calabrese sausage or truffle oil, the Throwback Burger is an attempt to offer "something a bit more "classic," Rathburn said.

"Everything Umami does is normally very forward thinking from a culinary perspective. We wanted to amplify some more nostalgic and vintage flavors this time," she said.

Umami Burger opened in September at 1480 N. Milwaukee Ave.

The Throwback Burger is the 11th burger added to the menu at the Wicker Park location. The burger will be available for an indefinite amount of time.
