Unicorn Cheesecake Bars Land in Park Slope

PARK SLOPE — Food trend connoisseurs can now sink their teeth into the kaleidoscope of pastel swirls that is a unicorn cheesecake bar at Park Slope's Buttermilk Bakeshop.

The mythic bars hit store shelves this month and blend a vibrant concoction of glitter, edible pearl beads and a colorful pallet for an over-the-top interpretation​ of the out-of-this-world unicorn trend.

“People just go crazy for the colors,” said Katie Rosenhouse, owner of the 260 Fifth Avenue bakery between Carroll Street and Garfield Place. “Obviously it’s a trend right now, for sure, but it’s just something you can have so much fun with — it's something quick for people to grab and adds a little magic to the day."

The succulent squares are sprinkled with sparkles atop decadent layers of classic cheesecake and a base of blue velvet cake in what Rosenhouse refers to as a cake-bar-cheesecake hybrid. Each bar costs customers $2.75.

Brooklyn is no stranger to the "uniconification" of food with fabled lattes, bagels and cream cheese spreads and even ice cream churro sandwiches.

Buttermilk Bakeshop is the latest Brooklyn eatery to jump on the unicorn trend bandwagon to beautiful effect, leaving customers gawking at the colorful creation rather than devouring it straight away, said one unicorn aficionado.

"It's so pretty I feel bad eating it," said Park Sloper Sara Jacobson, before chowing down on a square. "It tastes just as good as it looks."
