North Brooklyn-Based Coffee Shop 'Variety' Opening Chelsea Outpost

CHELSEA — A North Brooklyn-based coffee chain that roasts its own beans is opening its first Manhattan outpost on Seventh Avenue.

Variety Coffee Roasters, which has outspots in Williamsburg, Greenpoint and Bushwick, will open a new cafe at 261 Seventh Ave., at the corner of West 25th Street, in the spring, director of operations Ky Katrensky said.

For decades, the space was home to Truemart Discount Fabrics, which recently moved to a storefront around the corner on West 25th Street.

“There was something very special about this corner,” said Katrensky, whose team looked at dozens of possible locations before deciding on the Seventh Avenue address. “As soon as we walked in, we were like, ‘This is it.’”

While some shops use coffee blends, Variety only serves “single-origin” coffee, which it has been roasting at its Wyckoff Avenue outpost for the past three years, Katrensky said.

All of its coffees are “ethically sourced” and green, its website notes.

Variety is still working on the menu for its Chelsea outpost, which will feature a sit-down space as well as to-go options, Katrensky said.

“We source our coffees with a lot of finesse and a lot of passion,” he said. “We pick the coffees that we love the most.”
