New Smith Street Coffee House Creates Original 'Rugelach' Recipe

COBBLE HILL — Rugelach, anyone?

A new Smith Street coffee house is bringing their own twist to the rugala, an Eastern European crescent roll with a pastry filling.

Roogla Coffee, at 180 Smith St., has created their own version of the snack, varying from “super sweet to savory,” said Tone Connors, director of operations for the coffee house.

Designed by bien cuit’s Zach Golberg, another Smith Street eatery, Roogla is serving a variety of fillings including cinnamon, chocolate and apricot to ricotta, feta and garlic, he said.

The coffee shop, whose name is taken from the pastry, opened last just month.

While the rugala is their only snack right now, they hope to create other tasty treats, like sandwiches on challah, said Connors.

Roogla is also serving their own coffee concoctions, “prepared in a way that was flawless,” said Connors, who has been in the coffee industry for 15 years.

Using a “steampunk,” a mechanized coffeemaker and siphon, the barista can adjust the time, temperature and agitation of the beverage, drawing out the best characteristics of the bean, he said.

While this is their first location, Connors is hoping to open other locations within Brooklyn in the coming months.
