Upscale Restaurant Tones Down the Fancy for Bucket Chicken on Mondays

FORT GREENE — It's usually suckling pig with peanut butter stuffed bacon-wrapped dates and buttered turnips and sunchoke on the menu at the fine dining restaurant, Prospect, on Fulton Street.

But they are departing from the regular fancy fare one day a week for "Bucket Mondays," a night when fried chicken comes in a KFC-style bucket and beans and slaw arrive on a plastic cafeteria tray.

"We spend all week preparing these complex and refined dishes and we wanted to give people a chance to experience Prospect in a new way," said co-owner Alan Cooper. "It's about doing simple food our way."

And forget entrees that normally set patrons back $30. During Bucket Mondays diners get half a fried poussin (baby chicken) with corn bread, buttermilk ranch, honey butter, hot sauce, bbq sauce and a choice of truffle mac & cheese, housemade slaw, or whipped potatoes and gravy for $15.

Prospect opened last year and has so far received a great response from locals who were craving something new and food-forward in the nabe, the owners say.

"All three of us (the owners which include myself, Stephen Cohen and Kyle McClelland) live in the neighborhood and it is great for us to contribute something to the community we live in and give them something we felt was lacking," Cooper said. "The sense of community is still very strong in Fort Greene and there is no better feeling than when our neighbors come in and tell us how happy they are to have us here."

Prospect owners hope Bucket Mondays will give locals something cheap and fun to do on Monday nights, when many of the other Fort Greene restaurants are closed.
