Dinosaur Bar-B-Que to Open in Gowanus Next Spring

GOWANUS — A new Dinosaur Bar-B-Que will open in Gowanus in spring of next year with the same smoke-pit style barbecue, homemade side dishes and a full bar.

Dinosaur Bar-B-Que, the popular barbecue chain that started in Syracuse, will be serving up its ribs, brisket, homemade pies and craft beers at the empty space located at 604 Union St. by spring 2013.

The restaurant, which also has a branch in Harlem, initially planned to open in March, but management reps say they are pushing its opening back until later in the spring.

“[Gowanus] offered us the type of building I like," said John Stage, founder of the Dinosaur chain. "[It's] semi industrious, right on the R line on 4th Avenue, good rents, great vibe. It's a very interesting nabe between Park Slope and Carroll Gardens.

As far as what's new on the menu, we're still working on a few new items."

The layout of the restaurant will be similar to others in the chain, Amorese said, and will include a full bar with rotating local Brooklyn, regional and seasonal craft beers.

“It’s all the same to our genre of southern-style barbecue, smoke-pit style and homemade side dishes,” said Lindsay Amorese, director of operations and Dino BBQ.

Physical construction has yet to begin, but should be happening soon, Amorese said. The restaurant began the bidding process for a contractor two weeks ago, she added.

A sign posted outside of the space explains that the restaurant has already applied for an on-site liquor license.

“I’m thrilled to be coming to Brooklyn and to be part of an exciting, evolving neighborhood,” Stage, told the blog Brooklynian.

"I can’t wait to start the build out.”
