SOUTH STREET SEAPORT — Ice cream infused with summer flavors is at New Amsterdam Market this weekend.

The market's annual Ice Cream Sunday will offer more than 30 unusual and refreshing varieties, inspired by everything from hay to wild fennel.

"We have more participants than we've ever had," said Robert LaValva, founder of New Amsterdam Market, said of the 11 ice cream chefs. "It's always very creative — what [chefs] do with what they find at the markets."

Newcomers to the festival this year include Midtown trattoria Esca and the Village's Il Buco, while perennial favorites The Bent Spoon and Van Leeuwen Ice Cream will return as well.

Sweet-toothed tasters can try hay ice cream from Early Bird Cookery, crème fraiche and lemon verbena ice cream from Marlow and Sons and strawberry wild fennel gelati and sassafras sorbet from Esca.

Early-bird admission tickets to Ice Cream Sunday, at South and Beekman streets, cost $30 in advance, $35 at the door, and include 10 ice cream tastes starting at noon Aug. 19. General admission tickets cost $20 in advance, $25 at the door, and include eight ice cream tastes from 1 to 4 p.m.
