Spoken Cafe Keeps Things In The Family With Guest Chef Po'Boy Pop-up Dinner

RAVENSWOOD — Spoken Cafe is hosting its first guest chef pop-up dinner Saturday, with a familiar name, if not face, doing the honors in the kitchen.

Chanel Gaudé, sister of Spoken co-owner Sidonie Gaudé, will be cooking up a Southern Louisiana po'boy dinner, available for takeout or dine-in, on a first-come, first-served basis from 5-8 p.m. at the restaurant, 1812 W. Montrose Ave.

The cost of the meal is $20, which includes one of three types of po'boys, three sides, a pastry infused with a Koval Distillery liquor, and a free featured beverage.

Gaudé, a highly regarded sous chef in Lafayette, La., has spent the past six months in Chicago, working under the tutelage of Big Jones chef/co-owner Paul Fehribach as part of the James Beard Foundation's Women in Culinary Leadership program.

She's heading to Italy next for a three-month apprenticeship in butchery, having already put her considerable skills to use at Spoken. Proceeds from the dinner will help fund her continued culinary education.
