Winchester Chef to Open New Restaurant at Former Birchwood Kitchen Site

WICKER PARK — Less than four months after Birchwood Kitchen served its last brunch, plans are coalescing for a new restaurant to take its place at 2211 W. North Ave., according to a Thursday press release.

Chris Pappas, owner of The Winchester, 1001 N. Winchester Ave., is teaming up with renowned pastry chef Nancy Silver to open an "inviting, European-inspired concept" sometime this spring, the announcement read.

On top of owning The Winchester, which specializes in organic Italian food, Pappas has a hand in several other Chicago restaurants, including Mia Francesca in Lakeview, Sepia in the West Loop and Old Town Social.

Silver is the founder of ice cream company Snookelfritz, and has crafted frozen desserts for restaurants like Big Star and The Violet Hour.

A name has not yet been chosen for the new restaurant, but more details will trickle out "in the weeks to come," according to the release.
